Virtually virtuous vegan banana bread! (or muffins!)
3 x very ripe large bananas
2 TBLS Chia Seeds
6 TBLS Water
140g Self-raising flour
100g Wholemeal flour
1 tsp Baking Powder
1 tsp Bicarb Soda
3 TBLS Agave Syrup (could substitute for Maple Syrup or Honey)
1 TBLS Brown Sugar
2 tsp Cinnamon
0.5 tsp Vanilla Extract
Dark Chocolate Chips (optional)
Drizzle of oil (rapeseed/ sunflower)
Pecan / Walnuts chopped and sprinkled on top (optional)
Pre-heat oven to 170′ C
Soak Chia seeds in the water for 15 – 20 minutes until it forms a paste
Line baking tin with baking parchment
Mash bananas and add all wet ingredients inc. chia mixture
In another bowl add all flour and other dry ingredients
In small sections add the wet bowl into the dry mixture and stir well until fully combined.
Add chocolate chips
Pour into tin (or muffin cases) and add chopped nuts, sprinkled on top
Bake for 40 minutes approx. (check with a skewer if it comes out clean it is done)
